As Executive Chef, Jamie continues to push creative boundaries while honouring the restaurant’s intimate connection to the Adelaide Botanic Garden. His tasting menu celebrates Australia’s diverse landscapes and seasonal bounty, featuring exceptional local ingredients such as marron, green ants, finger limes, and bunya branches. With a strong focus on seasonality, sustainability, and culinary artistry, Jamie and his team craft dishes that tell compelling stories—celebrating both the land and the people who nurture it.
